This tasty recipe is quick and easy in your crock pot . . . and you can vary the vegetables based on what you like and what's on hand.
In 3-quart slow cooker, combine:
1-1/2 c carrots, peeled and cut in chunks
1-1/2 c cubed zucchini or fresh green beans, cut in 1" pieces
4 medium red potatoes, scrubbed and cubed
2 medium onions, peeled and cubed
1 t garlic salt (or 1/2 t each garlic powder and salt)
ground black pepper
Brown in skillet according to package directions:
1 16 oz. to 20 oz. package Italian sausage
Add browned sausage on top of vegetables in slow cooker. Pour over all:
1 14.5 oz. can Italian seasoned diced tomatoes
Cover and cook on Low setting 8 -- 10 hours, or on High setting 3 -- 4 hours.
Serve with crusty, whole-grain bread and a dark green salad. Serves 4 to 5.
